ARTICHOKE PESTO

Inspired by the Tuscan hills, Artichoke Pesto combines a twist on familiar basil pesto with the delicate flavour of artichokes, thyme, lemon and garlic.

This tasty spread can be served as the topping for crostini or bruschetta. For speedy summer suppers, simply stir the pesto through warm pasta or serve chilled as a brilliant barbecue pasta salad.

Or, for a more elegant dish, finish a pan-fried chicken breast with white wine, cream, asparagus tips and a spoonful of the pesto.
