OK, strictly speaking not exactly a ‘jam’ but it is a gorgeous sticky sweet yet savoury onion and chilli concoction. What makes it special is the addition of the Kentucky bourbon which gives the finished product a deep auburn glow and exceptional flavour.

As well as being great with cheese of all kinds (including
fondue cheeses) this versatile chilli jam could:

• Serve it alongside a simple ploughmans with
  some baked ham and good strong cheddar
• Stir in with some caramelised apples and
  serve as an as an accompaniment to
  pork sausages or grilled pork chops
• Use it as the base for a

• Add wholegrain mustard and use
