Chilli Jam

A sweet ‘n’ savoury chutney spiked with red chillies and Kentucky bourbon.

OK, strictly speaking not exactly a ‘jam’ but it is a gorgeous sticky sweet yet savoury onion and chilli concoction. What makes it special is the addition of the Kentucky bourbon which gives the finished product a deep auburn glow and exceptional flavour.

As well as being great with cheese of all kinds (including
fondue cheeses) this versatile chilli jam can be used as a ingredient in everything from soups to sauces.

For instance, we love to stir it some into caramelised apples to create a lively accompaniment to pork sausages or grilled pork chops. Amazingly simply, yet simply amazing!
