A fabulous and fragrant shortbread mix. By combining lemon with bergamot (a flavour found in Earl Grey) it's afternoon tea all in one!

As well as being a sweetly sumptuous shortbread in its own right, a little imagination can give this mix many other uses.

For instance, you could use it as the crumble topping for poached pears or white peaches, or as the base for a lovely lemon meringue cheesecake. And by adding rosemary, basil or orange zest you can create shortbread with a surprising and subtle twist.
